As a culinary consultant in Tokyo, sometimes I get a request that sends me down a rabbit hole of research. The best research, of course, involves eating everything myself. It’s an impossible task, but I’m happy to be the one to attempt it.
It was during “research” that I came across my latest sushi obsession. It’s a sushi place so good that I go by myself on a regular basis whenever I can get a reservation.
To underline how unusual this obsession, I need to make a confession:
I rarely go for sushi outside of work. I almost always prefer to spend my money elsewhere.
This place, however… this is different.
It’s a place so good I’ve seen customers skive work for the lunchtime nigiri course.
